Salted Duck Egg
Last September I was lucky enough to get a three duck eggs from someone. I decided to make salted duck eggs. I searched and found many recipes, but they mostly had extra stuff in it. I just wanted the simple version because I wanted to use it in a steamed egg and pork dish. I finally found a recipe from a farm in Canada. The salt to water ratio is a 1 to 4. Here is a link to Freestyle Farm Salted Egg Recipe that I followed. I made a smaller version and put a plastic bag with water in it to push the eggs down in my jar. I wanted to make sure the eggs were submerged.We got very busy while the eggs were in their brine. I checked one egg after a few weeks, but the yolk had not formed. I left the eggs in the brine for 35 to 40 days. At which time, I just stuck them in an egg carton in the fridge. We had a trip planned so we did not have time then a disaster when we returned home led me not to use those eggs for 3 months. I cracked one opened. It had a beautiful yolk. It did not smell bad so I decided to use it. I figured, I am the only one who eats eggs in this household so only I would get ill. Besides salt is a preservative, right?
So in a small glass pie pan:
- ⅓ pound of ground pork, spread it out flat on the pan
- 1 salted duck egg, yolk cut in quarters
- 1 chicken egg
- Dash of oil (my ground pork is very lean.. it was ground by me)
- Dash of water
Steam for about 25 minutes (depends on the depth of your dish). Check for doneness by poking a chopstick in the center. If it is still watery, steam longer. My dish was just like Mom makes!
If the salted egg you have is not salty enough, you might add salt before steaming or use soy sauce or salt at serving time.
Serve over steamed rice and accompany with stir fried vegetable.
Notes:
- I did not get sick.
- In prior years, I have used chicken eggs to make salted eggs. The duck eggs have a bigger yolk.
- Raw salted egg goes into this dish and joong (glutinous rice with lots of stuff wrapped in leaves and boiled).
- In Chiang Mai, you can get hard boiled salted egg at the grocery store. I have seen a glass noodle dish that is stir-fried on restaurant menus.
