Instant Pot No Soak Beans


Instant Pot Cooking Orca Beans (03-August-2017)

After reading SeriousEats about not soaking black beans, I decided to just try cooking beans without soaking in our Instant Pot. I would add salt and initial flavorings, then add sautéed chilis, onion and garlic to finish (similar technique used for cooking dal). Initial flavorings were based on bean recipes that we came up with in the past. I chose to use Orca (also known as Calypso) beans and just picked 20 minutes with natural release for the cooking time based on ranges given on various websites.

Instant Pot cooking:

  • 1 lb. orca beans (about 2 ½ cups), quickly rinsed
  • ¼ onion
  • 4 cloves (inserted into the onion)
  • 1 bay leaf
  • 2 cloves of garlic, peeled and smashed
  • 1 ½ teaspoon salt
  • ½ teaspoon cumin seed, ground in mortar
  • ½ teaspoon Mexican oregano, ground in mortar
  • 7 cups water
  • 1 roma tomato, diced (see note*)
Used manual pressure cooking for 20 minutes with natural release. Natural release took about 35 minutes.

Finishing:

  • 2 serrano chilis, sliced
  • 2 garlic, diced
  • ½ onion, diced
In a frying pan, sauté chilis, garlic and onions in olive oil until lightly browned. Add to the beans. Results: The texture of the beans that a few came out slightly hard and a few exploded. Most had good texture and somewhere I read that acidic items should be added later. So next time, I will add the *tomato with the finishing flavorings. I poured out some excess water before adding the finishing ingredients. These beans were delicious and one of the major elements in making the best chile verde burritos that we ever made!
