Chiang Mai Pineapple Fried Rice

Special Fried Rice

Fried rice is a great dish to make to use up leftovers. So, no quantities are included in the "recipe" below. Eyeball the ingredients based on the amount of rice or other ingredients you have and decide. Here in Chiang Mai, leftovers will often include "Sai Oua" (Chiang Mai Sausage) and pineapple. Someone mentioned adding tomato and bell pepper to pineapple fried rice and "yum" - great suggestion. It's wonderful! One can make a good fried rice with the minimum of leftover white rice, oyster sauce, soy sauce, a meat or tofu and/or eggs, green onions or cooked onions, and oil. If the items being added to the rice are not that flavorful, I add chopped garlic to the oil and let it sit for a few minutes before cooking.

Chiang Mai Pineapple Fried Rice Ingredients

  • egg(s), scrambled
  • bok choy or Napa cabbage, chopped
  • red bell pepper, chopped
  • sai oua, taken out of the casings and chopped
  • pineapple, chopped
  • plum tomato, chopped
  • white rice (leftover - not freshly cooked)
  • green onions, chopped
  • oil for cooking
  • oyster sauce
  • soy sauce
  • salt
  • white pepper (optional)
  • wedge of lime
  • optional condiments:
    • rice vinegar with chopped chilis
    • fish sauce with chopped chilis
    • dried ground chilis

Instructions

  • Fry scrambled eggs and set aside.
  • Stir-fry vegetables in oil. Salt to taste. Set aside.
  • Stir-fry red pepper until almost soft. Set aside.
  • Stir-fry sai oua, add white rice, pressing down to separate rice. Flavor with oyster sauce and soy sauce.
  • Push rice to one side. Add tomato then pineapple and bell pepper to cook and warm in the center of wok or frying pan.
  • Add vegetables, eggs and green onions. Add white pepper, if using.
  • Mix up everything together.
  • Serve with a wedge of lime and condiments, if using.
